If you’re not one who usually picks up a bag of parsnips at the grocery store, you will be after trying out this recipe. And I mean it. It’s a total game-changer, a renaissance of root vegetables, a dish that is always empty at your potlucks or dinner parties- and the best part it- it only takes about 10 minutes to make.

While I named this recipe “Parsnip Salad” it really is more like a coleslaw I think. It has the crunch, it has the zing, but there’s an extra mouth-watering element that comes with the combination of the spice of the parsnips mixed with the dressing. It’s too exciting not to try out. So without further ado- here is the recipe. If you end up trying it out- post a picture on Instagram and tag @hillside.gardens so we can see your creations and hear how much you enjoyed it!!
