If you’re not one who usually picks up a bag of parsnips at the grocery store, you will be after trying out this recipe. And I mean it. It’s a total game-changer, a renaissance of root vegetables, a dish that is always empty at your potlucks or dinner parties- and the best part it- it only takes about 10 minutes to make.
While I named this recipe “Parsnip Salad” it really is more like a coleslaw I think. It has the crunch, it has the zing, but there’s an extra mouth-watering element that comes with the combination of the spice of the parsnips mixed with the dressing. It’s too exciting not to try out. 1 pound parsnips
1/2 cup parsley roughly chopped
1/4 cup minced red onion
3 tablespoons lemon juice
1 tablespoon vinegar
2 tablespoons olive oil
Salt and pepper to taste
Use a vegetable peeler to remove the peel of the parsnips.
Shave thin ribbons of parsnip until you reach the core.
In a large bowl, combine shaved parsnips with parsley, red onion, lemon juice, apple cider vinegar, and olive oil.
Toss until well combined and add salt and pepper to taste.
